Tate’s Bake Shop Cookie/Cookbook Giveaway

Yes, more goodies to share with all of you!  I’m just going to call these last few months something like “The Great Holiday Season Giveaway Bonanza” or something like that.  It makes me so happy to be able to host fun giveaways--any time of the year, but even more so at the holidays.  This week, I have Tate’s Bake Shop Cookies and their official cookbook to award to one lucky reader.  And let me just say--you’re going to love these cookies!

Kathleen King started baking cookies on her family’s farm when she was 11 years old, so it’s no surprise that she’s perfected them.  Her father was the one who inspired her to find her way, and so the shop is named after him.  It’s located in South Hampton, NY--as if it couldn’t get any better there!  If you’re in the area, stop by for all kinds of baked goodies, as well as salads and sandwiches.  If you’re not in the area, don’t worry--you can order online!  I received a box of three different cookies from Tate’s, along with the cookbook* by Kathleen King, owner of Tate’s Bake Shop.  First, let me talk about the cookies, then we’ll get to the book.

The box has three different kinds of cookies:  Chocolate Chip, Oatmeal Raisin, and Macadamia White Chocolate Chip.  We loved each and every one of them.  They’re thin and crispy, buttery and rich tasting, and they actually look and taste homemade--like someone put their heart into making them.  You won’t be able to stop at one, I can tell you that!  Each variety that we tried was fantastic.  They didn’t last very long in the house.  Also?  They’re made with ingredients you’ll recognize.  These are the kind of cookies that’ll bring you back to mom’s kitchen.

  • Have you got family and friends that aren’t home for Christmas?  Have some of these shipped to them and it’s a gift they’ll devour and remember.  They’ll truly love it.

Now, let’s talk about the book.  It’s packed (156 pages) with simple recipes for every day baking.  Kathleen says that the recipes in the book will take you less time to prepare than if you ran out to the store to buy something comparable.  Included in the book is the famous Chocolate Chip Cookie recipe.  There’s a foreword by Ina Garten herself, and chapters include:

  • Muffins and Scones
  • Pound Cakes and Breads
  • Cookies and Bars
  • Pies, Crisps, and Cobblers
  • Cakes
  • Healthy Alternatives

From Ina’s foreword:

“As soon as Kathleen opened her doors in 1980, Barefoot Contessa carried everything she made:  chocolate chip cookies, oatmeal cookies, lemon bread, carrot cakes, sour cream coffee cakes…even the most delicious doughnut holes.  Every day we placed an order and every night the shelves were empty.”

I tried a few recipes from the book, and they didn’t disappoint.  First up were Mincemeat Muffins.  I love mincemeat--my mom always had the pies at the holidays, and I grew to love the flavors.  What do you do with leftover mincemeat?  Make muffins with it, of course!   My husband and I loved these--full of flavor and great texture.  The kids, not so much, but they don’t like mincemeat, either.

I also made the Raspberry Squares in the book.  I had to.  A shortbread with chopped almonds and raspberry filling?  I was all over that one!  I can still taste them, and cannot wait to make some more.  They were truly fabulous, and got better each day, like shortbread does.

Makes 16 squares of raspberry-almondy shortbready goodness! (those are my words, not in the book.)

Featured in Food Network's $40 a Day. 

1 cup salted butter, softened to room temp
1 cup sugar
1 egg yolk
3 cups all purpose flour
1 cup whole almonds, chopped (I left some larger pieces, too)
1 1/4 cups raspberry jam

Preheat oven to 350 degrees.  Grease a 9 inch square baking pan.

In a large bowl, cream the butter and sugar until combined.  Add egg yolk and mix.  Add flour and almonds, blending well, but keep the mixture a bit crumbly and not too dry.

Pat half the mixture, about 3 cups, into the pan.  Bake for 20 minutes. Remove from oven and immediately spread the jam over, leaving about 1/4 inch border on the sides.

Crumble the remaining dough evenly over the jam.  Pat lightly and bake for 40 minutes.  They should be golden brown on the top.

  • Mine seem thicker than the ones pictured in the literature that came with the cookies I received.  But no matter--they’re fabulous!
  • They’re a bit crumbly--more so at first.  But as the days went by, they got less crumbly and the flavor improved, as it does with shortbread.
  • The crunchy almonds are great for texture in these bars!  You get the velvety shortbread, the jammy jam, and a really nice crunch.  Perfection!
  • You must make these!

And lastly, I made the famous Chocolate Chip Cookies.  The family loved them!  In fact, they were devoured.  My chocolate chips were bigger, but who’s going to complain about that?  They were thin, crispy, and everything you want in a cookie.  You’ll have to see the book for that recipe. My favorite cookie is called a Scotch Fudge Biscuit. My mom got the recipe in Australia and I've never seen it. It's basically a oaty, coconutty shortbread with chocolate frosting on it.

My all-time favorite cookie is called a Mud Dobber from the Peach Tree Family Cookbook (goo.gl/1eNnS). It's extremely chocolatey, with a good dose of espresso powder, and hardly any flour. Addicting!

Wooo-hoooo! Cookies AND a cookbook? Yes, please!! LOL One of my favorite cookies are cranberry pecan noels, I think they're similar to a shortbread or butter cookie. They are so tasty and quick to throw together.
